Salmon
Noodle Soup
Ingredients:
2 Salmon
fillets
2 cloves
garlic, chopped
1/3 cup soy
sauce
1 tsp.
grated fresh ginger
1 tsp.
crushed red pepper
1 Tbsp.
honey
2 packages
udon or soba noodles
1 Tbsp.
sesame seed oil
4 cups
vegetable broth
2 Tbsp. soy
sauce
1 handful
of spring onions, sliced
1 handful
spinach
2 green
onions, chopped
sesame
seeds (optional)
Preparation:
Combine
garlic, soy sauce (1/3), ginger, red pepper, and honey into bowl and mix.
Marinate Salmon in mixture for 30 minutes.
Preheat
broiler, and then cook under direct heat for 8 minutes until fillet flakes away
with fork.
Preheat
oven to 375 degrees F. Preheat your grill to high heat.
Brush the
Salmon with olive oil and season with salt and pepper.Place on grill and cook for 12 minutes,
6 minutes on each side. Finish in oven.
In a small
saucepan, bring shallots and wine to a boil, reduce until almost all liquid is
gone. Add cream and bring to a boil, reduce heat. Reduce the cream down to
half, then remove from heat. Gradually add butter and stir with a whisk to
create your sauce.

Traditional Norwegian Open Faced Salmon Sandwich
Ingredients:
Salmon,
thawed
Hard boiled
eggs, sliced
Tomatoes,
sliced
Lettuce
leafs
Mayo and/or
cream cheese
Lemons, sliced (no
rind)
Parsley
springs
Assortment
of breads and bagels
(Quantities depend on how
many you are serving)
Preparation:
With a sharp knife thinly slice the salmon at an angle (filleting), skin side
down. Arrange the salmon on a serving platter along with thinly sliced, leaf
lettuce, tomatoes, hard boiled eggs, lemon and parsley sprigs. Arrange
an assortment of breads and bagels in a lined basket (best served warm!). Put
Mayo and/or cream cheese (whipped until soft and spruced up with chives or dill
if you would like) into a small bowl or serving dish.
Let your
guests create their own sandwich and enjoy. This is a great breakfast dish or
midday snack, best with coffee!
