Halibut Steaks
Ingredients:
4 Halibut
steaks
3 Tbsp.
butter or olive oil
3 garlic
cloves, chopped
1 tsp.
rosemary
Fresh
peppercorn
Salt and
pepper to taste
Preparation:
Melt
butter in large skillet over medium-high heat. Stir in garlic. Season halibut
steaks on both sides with rosemary, salt, and pepper. Place steaks in pan and
cook for 10 minutes, or until fish flakes when tested with a fork. Flip steaks halfway through cooking to brown on
both sides. Sprinkle with fresh rosemary sprigs and grated peppercorn before
serving. Serve on top of grilled zucchini.

Ingredients:

pound Halibut fillets, sliced 1/2-inch thick
2 Tbsp. olive oil
1
Tbsp. garlic powder
1
Tbsp. onion powder
1/2
tsp. salt
2
tsp. white pepper
2
tsp. black pepper

tsp. cayenne pepper
2
tsp. thyme
2
tsp. oregano
1
tsp. paprika
Preparation: Place
halibut in a bowl with olive oil and let stand 30 minutes. Combine spices in a
9-inch pie plate. Heat cast
iron skillet over high heat. Remove halibut from olive oil and drain. Dip
fillets into seasonings and coat each side evenly. Put
fillets into hot skillet and cook 2-3 minutes on each side, turning only once. This recipe can be used with sea bass or snapper as well.
