Swordfish Recipes

Swordfish with Tomatoes and Basil

 


Ingredients:

2 Swordfish steaks

1 c. grape tomatoes, halved or whole

2 garlic clove, chopped

6-8 fresh basil leaves, shredded

Salt and pepper to taste

2 tbsp. olive oil

1/3 c. seasoned bread crumbs

Preparation:
In skillet combine olive oil (1 tbsp.) and garlic and sauté until golden. Add tomatoes and salt and pepper and cook for 5-8 minutes. Remove from heat and toss in basil. Brush steaks with olive oil (1 tbsp.) and grill for 5-10 minutes on each side or until fish flakes easily and is cooked to desired doneness.

Place seasoned bread crumbs on top of fillets and broil until toasted.
Add tomato basil mix on top and serve.
