Lobster Bisque

 

Ingredients:

4 Lobster tails

1/3 cup dry sherry

1/4 cup butter

3 Tbsp. flour

3 cup milk

1 tsp. steak sauce

Salt, seasoned salt & pepper to taste

 

Preparation:

Remove any membrane from lobster. Separate into small pieces, put in bowl and cover with the sherry. Let stand 20 minutes. On top of double boiler, over simmering water, melt butter; blend in flour and cook 1 minute. Gradually add milk and cook, stirring, until thickened. Season, add soaked lobster with the sherry; simmer, covered, 10 minutes.

 

4 servings.
